Beef Morcon

Season the beef with salt, pepper, and the garlic powder.

Wrap ¼ of the carrot, celery, pickled cucumber, and sausage with 1 slice of bacon. Place on the end of a slice of beef. Roll the beef, keeping the filling in the center. Tie with kitchen twine to ensure that the roll won't open up while cooking. Repeat to make 4 rolls.

Heat the oil in a large skillet over medium heat. Dredge each beef roll in flour and fry the rolls until they are evenly light brown, about 20-25 minutes. Remove from pan and set aside. Reserve 2 tablespoons of the oil.

Heat the reserved oil in a large saucepan over medium heat. Sauté the garlic, onion, and tomatoes for 1 minute. Add the stock, bay leaves, pineapple juice, soy sauce, and tomato sauce. Mix well and bring to a boil.

Season with salt and pepper, to taste. Reduce heat to medium-low. Add the beef rolls and simmer until tender, about 2 hours. Remove the beef rolls from the saucepan and let cool slightly.

Meanwhile, strain the sauce and then simmer until thick, about 20 minutes. Remove the kitchen twine from the beef rolls. Cut into slices, approximately ½-inch thick and arrange on a serving plate. Pour the sauce over the roll slices and serve.

  • 1 pc. bay leaf
  • ¼ tsp. salt or salt to taste
  • ¼ tsp. pepper or pepper to taste

Cooking Instructions:

  1. Cut the beef round morcon-style “wide beef slices” Using kitchen tools. Arrange each beef slice between two heavy duty plastic wrap and with a meat mallet, pound to about ½-inch thick or thinner. Repeat with remaining beef slices. Trim sides of meat to shape it as close to a rectangle.
  2. Combine beef, soy sauce , lemon juice in a bowl and pepper to taste and marinate for about 30 minutes. Fry bacon in a pan over medium heat, until cooked but still limp, not crispy. Remove from pan and drain on paper towels. Drain beef from the marinade mixture, squeezing any excess liquid and reserving marinade. Lay beef on a flat surface and arrange bacon in a single layer on top of the beef.
  3. Arrange strips of hotdogs, carrots, cheese, pickles and halves of eggs lengthwise over bacon. Gently gather end of beef upwards and roll neatly into a log, enclosing filling.
  4. Using kitchen twine, tie beef roulades snugly at both ends and centre to fully secure and lightly dredge with flour.
  5. Heat oil in a wide heavy-bottomed skillet over high heat. Then gently add beef roll and lightly brown on all sides and remove from pan and drain on paper towels. Discard oil from skillet but leave at least 1 tbsp.
  6. Add garlic and onions and cook until limp.
  7. Add the reserved marinade mixture and bring to a boil.
  8. Add tomato sauce and beef broth.
  9. Add bay leaf, salt and pepper to taste. Bring to a boil.
  10. Gently add beef rolls in a single layer. Lower heat, cover and cook for about 40-60 minutes or until beef is tender.
  11. Remove beef rolls from pan and set aside for about 3 to 5 minutes.
  12. Slice into 1-inch thick rounds and arrange slices on serving platter. Keep warm.
  13. Add liver spread into sauce and stir until dissolved. Continue to cook for about 6-10 minutes or until sauce is thickened.
  14. Pour sauce over morcon slices and serve hot.

1). Spread and stretch the sliced beef on your working table.

2). Arrange the filling on the sliced beef: sausage strips, cheese strips, sliced eggs, pork fat and some ground liver.

3). Roll the sliced beef with all the filling inside and secure with a thread or string. Repeat the procedure for the two remaining beef slices.

4). On a pot, place the beef rolls. Put the water, the remaining ground liver.

5). Followed by grated cheese, chopped onions, bay leaves.

6). Add ground black pepper and salt. Cover the pot and bring to a boil. Simmer for one hour.


Morcon Kapampangan

Morcon Kapampangan or Murcon is different from the morcon we commonly know. The usual morcon if made from wide and thin slice of marinated beef filled with sliced boiled eggs, sausages or hotdog and rolled up to form a cylinder, tied up with thick thread and then simmered until cooked. The Kapampangan version of morcon is made from ground pork and beef, chorizo, onions, raisins, eggs, grated cheese and wrapped in pig’s caul fat. it is then steamed or simmered until cooked. This morcon look very similar to embotido and after it is sliced, the drippings from the steamer will be poured with the oil. The morcon is best when submerged on it’s own fat.

Too cook this dish In a bowl, mix together ground pork, ground beef, duck egg yolks, onions, raisins, grated cheese, tomatoes and garlic. Set aside. Cut a portion of the pig’s caul fat and place a handful of the morcon mixture on it. Spread out the mixture and top with 2 to 3 slices of the chorizo. Roll the morcon like a cylinder and do the same with the rest of the mixture. Arrange the morcon on a deep plate with the annatto water and put in the steamer filled to 3/4 and steam for 4 to 5 hours on a very low fire. Let cool.
