Ingredients

  1. Ground beef 800 grams
  2. Carrots 2 pieces (small size)
  3. Parsley root 1 piece
  4. Celery root a small slice
  5. Bacon or fat 100 grams
  6. Green onions to taste
  7. Shallots 4 pieces
  8. 1/2 liter broth
  9. Flour optional
  10. Frying oil
  11. Salt to taste
  12. Pepper to taste

Frying pan, meat grinder, plate, grater, cling film, cutting board.

Cooking:

Step 1: prepare the filling.


Peel and grate carrots, horseradish and celery on a medium grater. Mix vegetables in a plate. Add to them finely chopped green onions and bacon or lard, passed through a meat grinder. Add some salt and pepper. Mix everything thoroughly until smooth.

Step 2: forming zrazy.


Mix ground beef with salt and pepper, then divide into 8 parts and put one part on a cling film, cover with a film also on top and roll out a rolling pin into a flat cake. Remove the film from the top of the meat.

Put a portion of the filling on one edge of the resulting meat tortilla. Wrap carefully, helping yourself with the same film on which the meat lies.

Twist the ends of the film like a candy. Take on the formation of the next zraza.
By the way, in this form, meat can also be frozen or refrigerated to prepare zrazy later.

Step 3: breading meat zrazy with vegetables.


Remove the cling film from the glass and sprinkle them well with wheat flour so that it sticks around the minced meat on all sides.

Step 4: fry meat zrazy with vegetables.


Heat a little oil in a frying pan and over high heat fry the zraza until golden brown on all sides. Then temporarily put them on a plate.
In the same pan in which you roasted, brown the peeled and finely chopped shallots.

Return the meat zrazy with vegetables to the pan with onions, pour in the broth, reduce the heat and leave to simmer 40 minutes under the cover. Cook until the meat is soft.

Step 5: serve meat zrazy with vegetables.


Meat zrazy with vegetables served hot, thickly watered with the sauce remaining in the pan. As a side dish, everything is the same as what you usually cook for meat.

- Vegetable filling can be changed; bell pepper, for example, goes well with meat. And if you use mixed or pork minced meat, bacon and bacon is completely optional.
