A successful combination (I say) between a yogurt ice cream with peach flavor and passion fruit, caramelized peaches and a slightly sweet crunchy sheet.

  • Ice cream:
    • 350 gr peach yogurt and passion fruit 8% fat
    • 170 gr fresh vegetable
    • 4 peaches
    • 2 tablespoons sugar
    • 1 tablespoon lemon juice
    • 100 ml water
    • 1 tablespoon brandy
    Caramelized peaches:
    • 4 peaches
    • 2 tablespoons sugar
    • 20 gr butter
    • 1 tablespoon brandy
    Furthermore:
    • 400 gr puff pastry
    • Brown sugar
    • Sesame seeds

Servings: 6

RECIPE PREPARATION Flavored dessert with ice cream and caramelized peaches:

We prepare the ice cream. We put the peeled and sliced ​​peaches in a saucepan with water, sugar and lemon juice and we give them a few boils, until the peaches soften. We take it down, mix the composition and put it to cool. Put the yogurt and whipped cream in the ice cream machine and beat it for 25-30 minutes. Before stopping the machine, pour the brandy. We wallpaper a wider shape, but not high with food foil. (I used a rectangular tart shape) I poured half of the ice cream. In the other half we put the peach puree, mix lightly and pour over it. Shape in the freezer until well frozen. Spread the puff pastry lightly and cut it into not very large rectangles. Wet the foil with a brush and sprinkle with brown sugar and sesame seeds. Prick with a fork from place to place. Place the foil in the pan and put in the preheated oven until nicely browned. We take them out and leave them to cool. Peel a squash, grate it and slice it. In a thick-bottomed saucepan, add the caramelized sugar. When it has acquired a beautiful slightly brown color, add the butter, mix well and put the sliced ​​peaches. Let the peaches soften slightly for a few minutes, and add the brandy. When the sauce is bound, turn off the heat and leave to cool. We mount the dessert on individual plates. Remove the ice cream from the freezer and cut it into slices of about 3 cm. Cut the piece of paper in half horizontally. Place 1/2 of the foil on the plate, put a slice of ice cream. place caramelized peaches, then half a sheet of sesame and sugar. Serve immediately
