Zucchini croquettes


  1. Zucchini 3 pcs.
  2. 2 eggs
  3. Flour 250 g
  4. Grana Padano (or Parmesan) Cheese 100 g
  5. Water 100-150 ml
  6. Salt to taste
  7. Pepper to taste

Step 1: prepare the ingredients.

Cut zucchini into thick slices 2-3 mm, put in a colander, salt well, put a load on top (for example, a plate, and a glass of water on it). Leave it like that on 30 minutesso that the zucchini gives away excess fluid.

Step 2: prepare the dough.

Cook the dough at the same time. Mix flour with eggs and grated Gran Padano cheese. Salt and pepper to taste. Add water gradually, stirring until a sufficiently thin, homogeneous dough is obtained.
Dry the slices of zucchini and add them to the dough. Mix well.

Step 3: fry the zucchini croquettes.

Heat enough vegetable oil in a large skillet. And with a tablespoon, lay out the dough for croquettes (1-2 tbsp for one croquet). Fry over medium heat so that the croquettes are fried not only outside but also baked inside.
Put the finished snack on paper towels to get rid of excess oil.

Step 4: serve the zucchini croquettes.

Serve crispy hot zucchini croquettes with various sauces (tomato, cheese, garlic, sour cream). It will be delicious anyway!
