Step 1 - Collect the flowers.

To make jam from the flowers of white acacia, you need to collect clusters of acacia in places away from the city. We cut whole clusters, slightly rinse them with water and dry them in the sun. We cut off the flowers in a separate container. Jam should be cooked only from the flowers of white acacia, as other varieties, such as purple acacia, are bitter.

Step 2 - Cooking Jam.

We put acacia flowers in a pan. Scalp lemons with boiling water, wash and cut into cubes together with the skin, removing only the bones. Pour flowers and lemons with water, put on a stove, bring to a boil and boil for 20 minutes over low heat. We cover the pan with a lid and infuse the broth for a day. After a day, filter the decoction of the flowers and lemon through a triple layer of gauze, squeeze it well, put the pan on the stove and gradually add sugar. Cook the jam over low heat, removing the foam with a slotted spoon.

Step 3 - You can also make syrup.

If you want to get syrup that can be added to tea and soak cake cakes for it, cook for 20-30 minutes, if you want to get more jam, cook for 45-60 minutes.

Step 4 - Done!

Pour the finished hot jam into clean, sterilized jars, roll up and wrap until it cools completely. Exit - 2 liters of acacia honey. You can store jam at room temperature. Enjoy your meal!
