Ingredients for tartar with rhubarb and strawberries
For the test
- Flour 2 cups
- Butter (cold) 8 tablespoons
- 1/2 teaspoon baking powder
- Brown sugar 2 tablespoons
- Cold water 4-6 tablespoons
- Flour 1/3 tablespoons
- Brown sugar 1/2 cup
- Ground cinnamon 1/2 teaspoon
- Ground cardamom 1/2 teaspoon
- Fresh strawberries 2 cups (chopped)
- Rhubarb 2 cups (chopped)
- Fat cream (for whipping) 1 cup
- 2 egg yolks
- Main ingredients: Rhubarb, Strawberry, Butter, Cream, Flour

Step 1: prepare the dough.
The dough can be kneaded in a blender by first mixing the flour with cold butter, a baking powder for the dough and sugar, and then adding iced water to achieve the desired consistency. Or you can do it by hand, just mixing all the ingredients in the order shown, and then adding water.
Step 2: cool the dough.
It is obligatory to use a detachable form, since the dough turns out to be very friable and thin, so removing it from a simple form you simply crumble everything.
Lay the dough on the bottom, spreading it with your fingers and on the sides including (about 2 centimeters high on the sides). And then send everything to the refrigerator.
Step 3: prepare rhubarb and strawberries.
Peel the rhubarb, rinse the strawberries, and then dry and cut all into medium-sized pieces.

Preheat the oven before 170 degreesand when the cake is ready to be baked, send it there on 35-40 minutes.
When the tart is baked, do not rush to cut it, it is better to let it cool, then the creamy filling will thicken and will not leak. Yes, it’s difficult to wait until this fragrant and tasty pastry cools down, but it's worth it.
