If you're wondering what a hot summer day can bring you, I'll tell you: a delicious raw vegan coconut ice cream with 99.90% ingredients extracted from coconut or coconut. I know I told you about coconut nectar, but do you know how good it is? Only good to sweeten an ice cream!

When I first tasted those coconut cream bars, I felt that there was nothing better in the world. Raw vegan coconut ice cream

300 ml homemade coconut cream (2 parts young coconut pulp and one part well blended coconut water)

20-40 grams of coconut nectar (depending on the taste of each)

Mix all the ingredients well in the blender, and the composition is either poured into the ice cream maker and follow its operating schedule, or in a container and left in the freezer for a few hours until it reaches the desired consistency.


What are the benefits of a raw vegan diet?

On the contrary, followers of raw vegan food are inventive and have created many methods by which they can enjoy tasty recipes, while preserving the nutrients in all foods. This is, in fact, the great advantage of the raw vegan diet - food retains its vitamins and minerals, which are normally lost with cooking.


Raw-vegan cake, made from dried fruits and seeds - recipe

I did not use exact weights in this recipe. It can be prepared "by eye".

Wheat ingredient:

  • raisins
  • end
  • raw sunflower seeds
  • walnuts
  • ground oatmeal
  • cocoa powder or carob
  • rum essence

Apple cream ingredient:

  • grated apples
  • lemon juice
  • ground oatmeal
  • Coconut
  • vanilla essence

Method of preparation

You can make this raw-vegan cake in two ways:

1. Either soak the dried fruit in hot water for a few minutes, and then blend them (goji separately).
2. Either pass them through the meat grinder and get a sticky paste, which you can thicken with ground seeds or cereals (it is the best option).

Prepare the worktop first, ie the first layer.

Use 2-3 hands of dates and raisins. Put them through the mincer. You will get a sticky paste.

Continue to drive the walnut kernel and sunflower kernel through the car.

Mix the date and raisin paste with the ground seeds and walnuts. Then add a little cocoa powder and mix.

If the composition is soft, add ground oatmeal as much as it contains. Add the rum essence and mix. You need to get a thick paste.

Place the paste in a round shape and press the composition well into an even layer. We used a small 18 cm cooking ring.

Then prepare the second layer, or apple cream. We used 3 apples, which we passed through the grater with small holes.

I sprinkled them with lemon juice and vanilla essence and then mixed them with coconut and oatmeal. The composition should not flow at all.

Apply the apple cream over the first layer and level.

Prepare the third layer, which is goji cream. This layer is optional if you do not have goji.

Put a few hands of goji berries through the meat grinder and sweeten them with a few teaspoons of honey.

Then mix them with coconut flakes, until a solid, non-flowing cream results.

Spread the goji cream over the apple layer and even out with the back of a spoon.

Decorate the cake to taste, if desired.

Put it in the fridge and let it sit for a few hours.

If it is still soft, you can put it in the freezer to solidify and cut it better.

A thin slice is enough as a portion, because the cake is very sweet, consistent and filling.
